Note : This Chardonnay has the particularity of developing a light oxidation that could make it confused with a cousin from Jura. Notes of dried fruit, citrus and spices enliven the nose, while on the palate the delicate balance between the softness of the wood and the acidic push is surprising. savoury. Perfect with aged raw milk cheeses.

Vinification & Aging: Spontaneous fermentation and long maceration of three months in contact with the skins (whole grapes). Aging of 30 months in old oak barrels in which it also carries out malolactic fermentation. No clarification, no filtration, no additives except for a small amount of SO2 just before bottling.
