Characterised by the individual personality of each rum, Distillery Collection No. 3 presents the most classic and rare expression: Copper Pot Still Rum. This discontinuous distillation method was originally used in Scotland for the production of whisky. Produced using the finest selection of sugar cane honeys, the spirits are aged in American white oak barrels until they reach the perfect level of maturity, resulting in a complex rum. This rum represents the heart of Diplomático's flavour profile. Pot Still distillation produces a very complex spirit, thanks to the use of sugar cane honeys and a prolonged fermentation process that allows the development of rich aromas and scents. Balanced and well-structured on the palate, where woody notes combine with coffee and dark chocolate. The finish is long and persistent. It best expresses its personality when enjoyed neat.
