Notes : Elegant perfume, with an important mineral trail that slowly opens towards flowers and yellow fruit. On the palate the citrus explodes, but also sage and thyme. Generously mineral on the finish.

Vinification & Aging: Careful selection of grapes, harvested exclusively by hand, in small boxes, around mid-September, depending on the seasons. Only when the bunch is perfectly ripe is it harvested in several passes, based on the state of ripeness.

Pairings: ideal to accompany shellfish dishes, cereal soups, goose liver and Margherita pizza.
