Notes: The nose is complex, mixing ripe fruit, broche and white flowers, especially acacia. On the palate it is very pleasant, fresh and not aggressive with floral aromas of great finesse.
Vinification & Aging: Harvest entirely by hand in crates, to respect the fruit as much as possible. Slow pressing and exclusive extraction of the first juices follow. The first fermentation is carried out at a controlled temperature before bottling. The second fermentation takes place in the bottle according to the classic method. Disgorging does not take place before 18/24 months in the cellar. Dosage: 7g/l
Pairings : Excellent as an aperitif, great with baked fish with sauces, seafood flans, scallops.
