Notes : Aromas of ripe and juicy pear, a hint of citrus (yellow grapefruit, lime), green pepper and ginger. A subtle salinity.
Vinification & Aging: The Brut "Belle Epoque" comes from a blend of 50% Chardonnay, 45% Pinot Noir and the remaining 5% Pinot Meunier. The most renowned crus of Champagne are involved in the composition of this jewel, and the most famous are Ambonnay, an enclave of Pinot Noir, Avize, in the heart of the Cote Des Blancs, Les Mesnil Sur Oger and Ay, to name just a few. Hervé Deschamps, now Chef de Cave of the winery, manages with continuous tastings to create a cuvée that borders on perfection in terms of balance and precision, already from the assembly of the base wines. The liquid undergoes malolactic fermentation, and after disgorgement a dosage of approximately 9 g/l of sugar is added. The refinement lasts for approximately six years on the lees, so that maximum complexity and harmony is achieved.
