Name: Sannio DOP
Notes: Noble aromas of ripe red fruit and berries. On the palate it is very soft, with balanced tannins.
Vinification & Aging: The grapes are hand-picked and taken to the cellar; destemming and soft pressing follow. The pure vinification is carried out with maceration on the skins with pumping over for about 20 days; fermentation takes place in stainless steel at a controlled temperature. The wine is then refined in large Slavonian oak barrels for at least 6 months. Maturation continues in the bottle.
Pairings: It pairs well with meat dishes, tasty first courses, cheeses and well-seasoned cured meats.
