Notes : On the nose the bouquet is rich and complex, with notes of tobacco, ripe red fruit, sweet spices. On the palate it reveals great structure, balanced and excellent persistence. Finish with hints of licorice.

Vinification & Aging: Careful selection of grapes. Fermentation at controlled temperature 28-32°C. Maceration of about 16-18 days with good use of the delestage technique. Aging for 24 months in new French oak barriques, followed by 12-14 months in the bottle.

Pairings : Stewed wild boar, furred game, spiced red meats, aged Sardinian pecorino cheese.
