Notes: Intense and persistent aroma, with hints of white peach, apricot and sweet almond, mixed with mineral and citrus notes. The flavor is vigorous, fresh and rich, a perfect description of a wine with character and strong typicity.

Vinification & Aging: The vinification is carried out by soft pressing of the grapes with a vacuum pneumatic press using inert gas, reducing contact between air and pressed grapes to a minimum. The must is decanted for 24-48 hours and is then transferred to steel vats at a controlled temperature with the addition of indigenous yeasts. The resulting wine is left in contact with its own yeasts for an aging of approximately 4-5 months sur lie.

Pairings: recommended with fish appetizers with crudités, seafood risotto.
