Le Difese is a young wine, with fruity aromas, with light spicy and slightly balsamic notes. In the mouth it is enveloping, full with a balanced tannic presence that guarantees a clean and persistent finish. A wine of great elegance and softness.

Vinification & Aging: After a careful manual selection of the bunches, the grapes are softly crushed and destemmed. Primary fermentation takes place in stainless steel vats at a controlled temperature of 27-28°. Maceration on the skins lasts 13-15 days for the Cabernet Sauvignon and 14-18 days for the Sangiovese, with subsequent pumping over to soften the tannins. Malolactic fermentation follows in steel, at the end of which the wine remains in steel for 3-4 months at a controlled temperature of 20°. Aging takes place in wood for 6-8 months, in French oak barriques previously used for Sassicaia and Guidalberto. At the end of the wood aging period, the wine returns to the steel tanks where the temperature is stabilized for about 20 days at around 4-5°C for the necessary tartaric stabilization, before bottling.

Pairings : It is excellent paired with traditional Tuscan dishes and large grilled meats.
