Notes : Very intense aroma, with notes of ripe apricot, candied lemon, papaya, saffron, and a marked spiciness of black pepper. Intense on the palate, confirming the sensations on the nose in the mouth; good acidity and length, with notes of violet, apricot, exotic fruit and saffron.

Vinification & Aging: Harvest second ten days of October; hand-picked in 15 kg crates with bunch selection in the vineyard and grape selection in the cellar. Vinification cold maceration of 18 – 24 hours of whole grapes then softly pressed, fermentation in steel at low temperature. Elevation in steel tanks with fine lees subject to bâtonnage, then in French oak tonneaux for seven months. Aging in bottle for a minimum of 4 months.

Pairings : Thanks to its marked freshness, it is ideal for an aperitif. It pairs well with fish dishes, ideal with shellfish, and with light dishes from modern cuisine.
