Notes : The aroma is of good intensity and persistence. The taste is pleasant, of good complexity and balance. The fruity notes integrate harmoniously with the slightly toasted notes typical of wood. Overall, the wine has a marked acidity and flavor that make it excellent to drink.
Vinification & Aging: Harvest in mid-September for Vernaccia grapes and early October for Trebbiano grapes. Maceration on the skins in the press for one night and soft pressing the following day. Aging for 8 - 9 months partly in steel and partly in tonneau, another 6 months in stainless steel tanks followed by 4 months in the bottle.
Pairings : Excellent aperitif wine, it is also recommended with fish-based dishes and white meats.
