Notes : Fruity aromas with a finely spicy finish. The taste is light, the tannins are round and well integrated into the structure making it fruity.
Vinification & Aging: The grapes were destemmed, crushed and transferred to stainless steel tanks where alcoholic fermentation took place, lasting 8-10 days at a controlled temperature of about 26 °C. Malolactic fermentation was completed by the beginning of winter. This was followed by a period of further aging, first in steel for about 8 months and then in bottle for another 4 months.
Pairings: platters of mature and blue cheeses, game-based dishes, dark chocolate desserts.
