Novello wine was originally born in France. Its name comes from the " vin nouveau " used across the Alps, particularly in the region where Beaujolais Nouveu is produced.
It is a wine obtained through carbonic maceration . What does it mean?
Carbonic maceration is an extremely rapid wine production process.
This vinification process consists of inserting whole grape stalks into large hermetic tanks together with carbon dioxide at a controlled temperature between 25 and 30°. The result, in a short time, is a soft, fresh and extremely sweet wine , which can be either still or sparkling, with a minimum alcohol content of 11%.
Novello wine also has some "bureaucratic" characteristics to be defined as such. In fact, by law, Novello is marketed between October 30th and December 31st , so this wine can be drunk for about 2 months and no more.
It is a perfect ally to be enjoyed near the fireplace in the company of friends, accompanied by cold cuts, grilled meat and the inevitable roasted chestnuts!
