Vinification & Aging: Entirely manual harvest, brief maceration in press for 8 hours. Alcoholic fermentation with temperature control. Bottling in cellar, followed by refermentation for 3 months and maturation for 12.

Pairings : Recommended for aperitifs, cocktails and fruit desserts.
