Name : Organic Wine

Notes : On the nose it is fruity, berries, with hints of earthy scents. On the palate it is fresh, well mineral and pleasantly persistent in the mouth.

Vinification & Aging: Harvest by hand in crates in the first days of September. In spring during the biological awakening and the natural rise in temperatures the wine is bottled after being inoculated by a pied de cuve made with its own must preserved sweet from the previous harvest. Once in the bottle the natural yeasts transform the sugars into alcohol generating carbon dioxide. Once the refermentation is over the yeasts precipitate to the bottom ensuring the natural conservation and evolution of the wine. During the refermentation the bottles are housed in the ancient infernot where temperatures are around 13°\14° degrees. 

Pairings : perfect for aperitifs, fish-based first courses and crudités.
