Vinification & Ageing: 2006 was a good year for Champagne, with a near-perfect growing season. July saw a heat wave across the region, followed by cooler weather and welcome rains in August, allowing the grapes to rest before the Indian summer brought them to perfect ripeness. By harvest time, the Chardonnay grapes from Bouron Leroi and Bouron du Midi had achieved the ideal balance of sugar, acidity and pure floral aromas. The conditions of the year were particularly favorable to Chardonnay, with the ripeness of the grapes, combined with the aromatic richness and vinosity, resulting in a wine of exceptional finesse and generosity.

Pairings : Perfect for fish aperitifs, raw seafood, oysters.
