Name: Champagne AOC

Notes : Fruity scent, citrus is dominant. Harmonious, full-bodied and balanced taste, acidic tip that recalls citrus. Overall great softness.

Vinification & Aging : 100% Chardonnay with first fermentation in steel and permanence on the yeasts for a minimum of 36 months. Vinification with malolactic fermentation. After disgorging, it is topped up with the same reserve wine. It is then rested in the bottle for 3 months.

Pairings : excellent culinary pairings with raw fish and sushi.
