Vinification & Aging : The Franciacorta Brut "Conte Aymo" by Tenuta Montenisa Antinori is a vintage sparkling wine of excellent elegance and freshness, perfect for all occasions. It is made with only Pinot Noir grapes and aged for a long period of about 64 months on its own yeasts. Alcoholic fermentation in steel tanks at controlled temperature and refermentation in the bottle according to the principles of the classic method.

Pairings : To be paired with meat and fish tartare, roast sea bream.
