Name: Sancerre AOP
Notes : Flattering nose typical of Pinot Noir, with notes of violet and spices. In the mouth it is powerful, intense, full of fruit and good structure. The tannins are good.
Vinification & Ageing: Harvested at night and very early in the morning to get the best from the grapes and preserve all their aromatic potential. The harvest is destemmed and selected in order to macerate the most valuable grapes which then undergo a cold and sulphite-free pre-fermentation maceration for 72 hours, this allows to extract the ruby color typical of Pinot Noir. The wine then begins 18 days of fermentation in stainless steel tanks thermoregulated between 18°C and 25°C. During this period, punching down and pumping over are carried out up to twice a day. A part of this wine is then aged in stainless steel tanks and the other will spend 9 months in oak barrels from the local forests of Tronçais and Bertranges. Here it takes place the malolactic fermentation, thus allowing it to be more rounded.
Pairings : Often used as a single wine with meals, it amazes with fish, game birds, rabbit, veal and even cold cuts platters.
