Name: Greco Sannio DOP
Notes: The scent is characterized by notes of apricot, yellow peach, peat, almond, mountain grass and ginger. The taste is perceptible of apricot and malt, closing the sensation of river stone and therefore minerality and intense yellow fruit.
Fòja (from the Solopachese dialect) means impetus, passion, energy and everything that inexorably burns. It represents the commitment that winemakers put into cultivating the land. Greco is a vigorous, strong vine and expresses this quality also in the glass, so much so that it is defined as "a red dressed as white".
Vinification & Aging : The grapes are hand-picked and taken to the cellar; destemming and soft pressing follow, preceded by cryomaceration in the press under an inert gas flow to avoid oxidation of the must. After static decantation for 24 hours, the clear part of the must is racked and inoculated with yeast strains that respect the primary aroma, i.e. the Greco varietal aroma. The wine thus obtained remains on the fine lees until February, after which it is racked, filtered and bottled in the first ten days of March.
Recommended pairings: fish and shellfish-based dishes, seafood, risottos or first courses of seafood and meat, but also white meats such as stewed rabbit.
