Notes : On the palate it brings strong citrus and floral notes, which slowly give way to wild fruit, wild strawberries, blackberries, until echoes of damp earth and clay are discovered. The long finish brings hints of bitter orange peel, black tea, pepper. A great drink, pure, savory, elegant.
Vinification & Aging: Carbon is a challenge, an invitation to comparison that wants to offer a valid alternative to the classic and more famous brands. Carbon is a disruptive champagne that wants to break away from traditional paths and reach new and higher levels of innovation. A very fine champagne, almost a haute couture product, in which the fine wools are replaced by Chardonnay, Pinot Noir and Pinot Meunier (50/25/25, in percentage) that, without having undergone malolactic fermentation, remain on the yeasts for over 6 years, with a dosage of 9 g/L.
Pairings : great toasts and dinners based on raw seafood and oysters.
