Notes : Aromas of blackberry and plum jam. Olfactory hints of coffee. The taste is velvety, enveloping. Very long persistence.

Vinification & Aging: The grapes were harvested slightly overripe. After destemming and a soft pressing, the must was transferred to stainless steel tanks, where the alcoholic fermentation took place at a controlled temperature not exceeding 28°C. Maceration, managed with delicate pumping over and delèstage, lasted for about 13 days. Torcicoda continued its refinement for about 18 months before being bottled.

Pairings: grilled meat, red meat stews, first courses with meat sauces and ragù.
