Notes: Refined wine with an unmistakable personality with intense aromas of apricots, figs, yellow peach and honey, full taste with a strong note of almond. Good acidity and long persistence on the finish.

Vinification & Aging: Drying of part of the bunches on the plant. Maceration of the skins for 8 – 12 hours. Fermentation at a controlled temperature with native yeasts after preparation of a pied de cuve. Aging in steel.

Pairings: Sophisticated and provocative with samples of aged cheeses, salted almonds, swordfish and smoked tuna; classic and elegant with almond desserts and dry pastry desserts.
