Notes: On the nose it is characterized by the depth that is revealed with notes of jammy berries, chocolate and black pepper . Opulent and at the same time elegant flavor, on the palate it has a soft entrance due to the light sugar residue. It is velvety and characterized by a long spicy finish, of licorice and dark chocolate.
Vinification & Aging: Harvest in the last ten days of November/first week of December when the fruit is overripe or withering due to the cold. It is a modern interpretation of a style of Aglianico produced in the past in the area and which recalls a sort of Amarone produced with only Aglianico grapes. Maceration of about 30 days being able to extract as much as possible having a complete and abundant maturation of the tannins. Maturation in natural volcanic tuff caves, in French oak barrels or tonneaux, for a period of at least 24 months and another 24 in the bottle.
Pairings: It pairs well with dishes with great structure. Good with meat-based preparations and cheeses with great aromatic persistence. Also very good with desserts based on melted bitter cocoa.
