Notes: Important wine with intense olfactory complexity of sweet spices, black cherry, bitter orange and peony. Harmonious and full in the mouth with soft tannins and a long and persistent finish. Elegant and fascinatingly balanced, true expression of the Nero d'Avola of the territory.

Vinification & Aging: Fermentation with native yeasts after preparation of a pied de cuve. Maceration at controlled temperature for about 15 days. Aging for 16 months in 4 hl stoneware amphorae that favor the maturation of Nero d'Avola, enhancing its typicality and territoriality.

Pairings: Dishes with a robust and spicy flavour, meat or vegetable based sauces, mature cheeses, grilled meats, roasts, mushrooms and game.
