Note : Produced since 1990 from Pinot Noir grapes, it is, in a certain sense, the “alter ego” of Cervaro della Sala: together they represent the two different expressions of the complex and refined soul of Castello della Sala. The vineyards from which it is produced are located at over 400 meters above sea level on calcareous soils rich in fossils with sands of sedimentary origin dating back to the Pliocene.

On the nose it expresses the typical aromas of the variety, such as violet, currant and raspberry, combined with light sensations of pink pepper. On the palate it is persuasive, harmonious, rich in spicy nuances. With its gentle soul, silky and refined tannins, it is a wine ready immediately but capable of expressing itself extraordinarily even in the years to come.

Vinification & Aging: After destemming and a soft pressing, the grapes were transferred to small stainless steel truncated cone-shaped tanks, where cold maceration for about 3 days was followed by alcoholic fermentation, which lasted about a week. The latter took place at a controlled temperature of 26 °C and ended in 228-liter containers where the wine completed malolactic fermentation and continued maturing for several months. The Pinot Nero della Sala was refined for a period in the bottle in the historic cellars of the castle before being released onto the market.
