Notes : The nose is surprised by its delicacy: hints of wild rose combine with fruity ones of cherry and plum. The palate is struck by its marked balance between sweetness and freshness, with an aftertaste dominated by the typical varietal notes of rose.
Vinification & Aging: At the time of harvest, the grapes were divided into two parts: one portion was immediately vinified, the other was left to dry for about a month, in dry and well-ventilated rooms, in order to obtain a greater concentration, both in terms of aroma and structure. The vinification process was the same for both portions. After a soft pressing, the grapes were transferred to stainless steel vats where maceration took place, lasting about a week in order to extract the aromatic component as well as the typical color. The fermentation, carried out at a controlled temperature below 20 °C, was interrupted once the desired sugar level was reached by suddenly lowering the temperature. The wine was stored at a low temperature until bottling.
